Past courses have included otoro tuna with caviar, ora king salmon, chutoro finished with gold flakes, and a wagyu course topped with shaved foie gras and black truffle puree, alongside fresh, unprocessed wasabi root grated tableside.

Seating is limited to just 12 to 16 guests at the counter, with fixed seating times so the whole room is served in sync; servers clear plates quickly and offer oshibori towelettes between courses, and diners are encouraged to eat certain pieces by hand, chef's-choice style.
